Spicy Fried Chicken
In a bowl, mix buttermilk, tabasco and salt. Add chicken. Marinate for a minimum of 2 hours, or overnight. Combine cayenne pepper, black pepper, baking powder, flour and panko (rice flour). Coat chicken lightly in flour mixture. Fry in 375 degree oil about 10-14 minutes on each side. Drain on paper towels. Makes 8 servings. Note: For pupu style, cut chicken into smaller pieces. |
