Spicy Fried Chicken

6 cups buttermilk
1/3 cup Tabasco sauce (optional)
3 tbsp. salt
3-3 lb whole chickens (cut into 8 frying pieces)
3/4 tsp. cayenne pepper, ground
3/4 tsp black pepper
2 tbsp. baking powder
2-3/4 cups flour
1 cup fine panko (rice flour)
1 quart vegetable oil

In a bowl, mix buttermilk, tabasco and salt. Add chicken. Marinate for a minimum of 2 hours, or overnight.

Combine cayenne pepper, black pepper, baking powder, flour and panko (rice flour). Coat chicken lightly in flour mixture.

Fry in 375 degree oil about 10-14 minutes on each side. Drain on paper towels.

Makes 8 servings.

Note: For pupu style, cut chicken into smaller pieces.
