Raker's Grilled Garlic Chicken

2 burner grill
1 medium sized chicken (with skin)
1/3 cup Olive oil (virgin if you can find it)
2 cloves garlic
salt and fresh ground pepper
 

Turn one side (one burner) of your 2 burner grill on high... Split chicken down breast, leaving it one piece so that it will lay flat.

Mix olive oil, garlic and salt and pepper in measuring cup and apply to both sides of chicken generously...

Place chicken (skin side up) on the side opposite the side the fire is on...

Leave for 1 1/2 hours, best to point the legs towards the side with the heat... baste the skin side till mixture is gone...

Just 5 minutes before done, you may apply garlic salt to both sides... to spice up the chicken...
