Crab Spring Rolls
1 whole beaten egg
4 pkgs spring roll wrappers
2 pkgs bean sprouts
1 can minced water chestnuts
1 lb minced crab meat
1 cup peanut oil
1 cup crushed peanuts |
SAUCE:
1 cup apricot jam
1 cup vinegar
1/2 cup soy sauce
2 Tbsp cracked red pepper

Combine ingredients for sauce and heat slowly.
Saute all ingredients except egg, until limp. Stuff wrappers full. Seal with beaten egg. Brown in hot oil.
Serve with sweet/sour sauce.
