Thelma's Mango Chutney
2 cups white vinegar
4 cups sugar
1 1/2 Tbsp whole cloves
1 1/2 sticks cinnamon
2 tsp grated garlic |
1/4 cup grated, fresh ginger
12 cups sliced green mangoes
1/4 cup minced onion
1 tsp salt
1 Tbsp finely minced hot peppers |
Boil vinegar and sugar. Tie cloves and cinnamon sticks in cheese cloth and boil in syrup for 10 minutes.
Remove. Add garlic and ginger and boil another 10 minutes.
Add remaining ingredients and cook approx. 1/2 hour or until desired consistency. Stir frequently to prevent sticking.
Pour into hot sterile jars and seal with paraffin. Serve with meat or curried dishes.
