Baked Chili Rellenos

6 eggs, separated
1 Tbsp flour
1/4 tsp salt
1/4 tsp pepper
1-2 7 oz. cans mild green chilies
1/2 lb cheddar cheese, thinly sliced

Salsa and/or sour cream (for garnish/dipping)

Lightly spray 9x2x13 glass dish with Pam. Preheat oven to 325 degrees F.

Beat egg whites stiff; set aside.

Remove seeds from chilies and slit into thin slices.

Combine flour, salt, pepper and egg yolks and mix well; fold in egg whites.

Pour half of the mixture into the glass dish; then layer chilies with cheese on top. Carefully cover with remaining batter.

Bake 25 minutes in 325 degree F oven. Allow to cool briefly, cut into squares and serve.

Note: You can substitute jack cheese or a combination of jack and cheddar cheeses for variety.
